Organoleptic Characteristics
Color: green with golden nuances.
The bouquet is mixed but decisive, with clear notes of tomato leaf, cut grass and chicory, laced with the aromatic essence of mint, laurel and white flowers just past their prime.
Harmonious on the palate, there are hints of rocket and tomato leaf that linger into bitterness and pungency that is present and balanced.
Where it is produced
This oil is produced of olives from a small olive grove located in Piscine (lots 26, 27, 28, 29 – plate 15), municipality of Tessennano (Viterbo) in a small valley with southern exposure and 28 Maurino varietal olive trees more than 40 years old.
The soil is of volcanic origin and particularly fertile, the pH is neutral, and the cultivation layer is sandy-clayey.
