Letter to clients 2021

We are living in troubled times, so I hope that this finds you well.

I am writing to you as an important “friend” to inform you about the trends of 2021 that we have just completed.

From the beginning of 2021 we knew that it would be a “year of discharge”, that of course is due to the typical alternation of the olive oil production- after an exceptional year 2020 the produce would be lower.

Fortunately for us the quality did not waiver, as the summer and autumn season was very dry and the rains of early October arrived at just the right time, especially for us and the Caninese olive groves the flavors and the aromas increase significantly. In fact, the 2021 harvest produced surprising notes of green coffee and black pepper in addition to some of the traditional aromas such as olive leaf, artichoke, thistle, rocket, lettuce, almond and pine nut that sensually dance from one variety to another.

The overall results are the oils from the early harvest varieties (Frantoio, Leccino, Maurino, Pendolino) produced beautifully delicate aromas accompanied by interesting bitter notes whereas, the Caninese emitted a strong characterization of flavors and exceptional aromas. Some Crus such as Musignano and Capo Terzo gave us strong flavors that enhanced the characteristics of the Caninese to the fullest with notes of grass, thistle, lettuce, almond pinenut and rocket intertwined with citrus to name a few.

Our opinion is that this will be a very high level of harvest accompanied by some particular characteristics, however, unfortunately the quantity this year is very limited.

As I have mentioned beforehand, bitter notes and unconventional flavors such as coffee and green pepper are more evident. Of course, an attentive observer recognizes the typical characteristics of their cultivars in all our Crus but also recognizes the variations, tones, and voices.

Harvests like this make us understand precisely the meaning of our motto. The variety and variability of olive oil in purity, above all for those who appreciate these infinite touches of nature and the art of miller that provide the creative chef with a great palette of colors with which to paint dishes that differ according to the moment and mood of the chef and diner.

The kitchen, especially a great kitchen is like performance art: it is valid in this instance and therefore gives real pleasure of knowing how to love in the single moment.

This is our mission. Part by choice and part because “we make oil” in the magical triangle of the Etruria, formed by the three most important (Vulci, Tarquinia and Tuscania), where it was born thanks also to Greek and Western civilization well before Rome. Even in those times people knew how to enjoy life and even the olive oil was made with variety. The Caninese also has been depicted on the Tarquinia frescoes which is extremely important for our territory and for our land.
